


At least once every two weeks I have a lazy lunch packing day that consists of throwing one pouch of tuna, one avocado, one lime, and some salt in a bag. When it’s time to eat, I mash it all together on the spot and call it tuna-guac. I usually eat it with rice crackers, but it would make a nice croissant sandwich with lettuce and tomatoes, maybe even some spicy mustard. A tasty, filling, and transportable dish (as long as you like tuna).

I can’t wait to try this! Knox is grossed out by tuna and pretty much any kind of canned or bagged meat. (haha!) he’s going out of town this week though and he has given me “permission” to have as much tuna as i want while he’s away. =)
